Title: Processing of Commodity Pork Description: Approve the processing of commodity pork for the School Food Service Department
· The School Food Service Department receives various commodities, including pork, from the United States Department of Agriculture (USDA). These commodities have to be processed into a useable form.
· J.T.M. Provisions, Inc. is currently the only approved processor for USDA commodity boneless pork.
· The boneless pork is processed into the following products: fully-cooked reduced-fat pork taco filling, fully-cooked shredded pork with Bar-B-Q sauce and fully-cooked pork meatballs with Teriyaki sauce filling.
· J.T.M. Provisions, Inc. processes the boneless pork using the fee-for-service method which represents a processor’s costs of ingredients (other than donated foods), labor, packaging, overhead, and other costs incurred in the conversion of the donated food into the specific end product.
· The cost is estimated at $100,000.
Recommendation:
I recommend approval of the processing of commodity pork by J.T.M. Provisions, Inc. and authorize the Superintendent and Board Chairman to sign all needed documents.
Financial Impact:
The financial impact to the District Budget is estimated at $100,000. The source of funds is the School Food Services Department budget.
