Continue to upgrade our current steamers to the new boilerless steamers - 3 of 5 years
- default_titleThis strategy began in the 2011-2012 school year. We began upgrading our current steamers in kitchens to safer more efficient boilerless steamers. We replaced 14 units this year for a total of 37 units overall.
- default_titleDuring the year we piloted combo ovens as a possible replacement for steamers to determine if the increased cooking capacity and possible cost savings would benefit our program. The results of the pilot showed that by replacing the boiler type steamers with combi ovens there was an increase in cooking capacity without increasing maintenance and utility costs. We tested and evaluated ovens from various manufactures and purchased 7 by the end of the 2013-2014 school year.
- default_titleWe plan to replace an additional 14 units in the 2014-2015 school year completing this project, at which time we will no longer have any boiler type steamers in our kitchens.
